10 Step Checklist for Eating Fresh This Summer

Summer is upon us! And what better way to celebrate than with amazing recipes, great food and great company?  But how many times (I know I am guilty!) have we walked into a store and INSTANTLY forgot what we are there for?  So to improve my own commitment to eating healthier this summer, I came up with this 10 Step Checklist to help me eat fresher this summer.  Many of these are “tried and true” methods!

 

  1.  Write down the items you need before you go into the store to avoid store overwhelm.

  2. Find recipes that have around  5-7 ingredients.  Keeping recipes simple with a few vegetables or fruits can really maximize the flavors.

  3. Experiment with spices, curries, salt rubs, vinaigrettes, etc.  Many times simply adding a dash of spice to your vegetables can drastically increase the flavor of the foods. Experiment! Try lemon, pepper, garlic, onion, chili pepper, balsamic vinegars, Himalayan sea salt, curry, etc. for extra flavors.

  4. Shop at local farms, fruit stands and Saturday markets to support local vendors.

5. Make a list of alternate recipe items. For example, if a recipe calls for “lemon”, maybe write down “lime”, in case the prices don’t match or your primary item is unavailable.

6. Watch where you shop! If you find yourself drifting into the inner aisles of a store, you are most likely shopping in the boxed and processed foods. Most stores have the freshest selections in the outer perimeter of the store.

7. Don’t be afraid to buy frozen. Frozen doesn’t always mean “not fresh”.  Be sure to review the labels, but many items are flash frozen with the flavor locked in.

8. Check your local listing for coupons at local stores before the week starts; maximize your spending when you can on different days of the week.

9. Spend an evening looking for recipes that make you really excited about wanting to make them! Make a plan for prepping and eating your great recipes.  Set aside 30 minutes a day, etc. to Pin, print and collect the recipes so they are easily searchable. This will make your prep. times quicker.

10. Spend time on YouTube, Vimeo etc. watching videos about how to cook with new spices and foods.  Many of the videos are done very well, and can help to teach and motivate you on how to cook new items.

 

 

 

 

Kitchen Hack: How To Cook Corn Super Fast!

Hello Everyone!

I learned this little cooking “hack” from my mom when cooking corn… [I know, right? Mom knows everything!]

Basically, it’s a super ninja tip to cooking 5-8 ears of corn all at once, and have them stay hot and juicy:

  1. strip husks off of corn, and rinse ears in the sink
  2. wrap each ear of corn in  3-4 sheets of paper towels
  3. hold wrapped ears under water, until all of the paper towels are dripping wet
  4. stick 4-6 of these sopping wet wrapped ears into the microwave
  5. microwave for 5-8 minutes
  6. be careful when removing, corns will be steaming hot –wear gloves!
  7. carefully unwrap corn from wet paper towels
  8. rub butter and spices on corn; serve!

Recipe for Cheesy Garlic Ranch Potatoes (with Bacon!)

Hey there!

Sunni here, and I have to say ‘WOO HOO!!”

On this beautiful Seattle Saturday morning, I decided to make this recipe I found. (#foodporn!)

This recipe meets all of my criteria for cooking/baking:

  1. quick
  2. easy
  3. simple
  4. tasty
  5. cheese! (Ok, that was extra…)

So here are my directions for repeating this oh-so-tasty and super simple recipe that your family will love!  I would also recommend this dish for a potluck or other social gathering.

INGREDIENTS:
2  lbs (or so) baby potatoes, unpeeled
1 cup ranch dressing (any flavor of Ranch will work!)
1 – 1 1/2 cups finely shredded Mexican 4 Cheese blend
2-3 Onion stalks/chives
5-6 pieces of bacon
Garlic salt, to taste

1. Cut potatoes into 1″ to 1 1/2″ pieces. Fill a 5 Qt pot half full with salted warm water (about 7 cups water and 1 tsp salt). Add potatoes & bring to a boil;  then cook at a low boil for 8-12 min depending on size of potatoes (they should be nearly done and should be fairly easy to pierce with a fork). Drain water well.

2. Drizzle 1 cup ranch dressing directly into the pot with drained potatoes and gently toss/stir – just enough to coat evenly.

3. Transfer potatoes into greased casserole dish (I used a glass 9×9 dish). Sprinkle potatoes with garlic salt to taste. Bake uncovered at 400˚F for 20-25 minutes. Remove casserole from oven and set oven to broil.

4. While to potatoes are cooking, cook and slice the bacon (see below). Prep and slice/dice the onions.  Mix the bacon, cheese & garlic in a small bowl: 1 cup Mexican cheese blend, bacon bits & more garlic.  Evenly sprinkle the bacon garlic cheese mixture over the baked potatoes,  then return the pan to the oven. Broil for another 2-3 minutes, or until cheese is melted.

Quick Way To Cook The Bacon:
1. line a plate with paper towels
2. lay bacon strips on towels
3. cover bacon with paper towels
4. microwave plate for 5 minutes to cook crunchy bacon
5. after bacon is cooked, cut bacon into crumble pieces

To Prep the Onion:
1. slice green onions into small pieces

Recipe for Cheesy Baked Zucchini, Yellow Squash & Tomatoes

Are you looking for a super-satisfying yet healthy alternative to eating processed foods? Me too! I found this simple recipe, and I L-O-V-E it! It’s quick to prep, tasty, low cost, super-filling and makes enough for plenty of servings! So let’s dive in to the nuts and bolts!

  1. preheat oven to 375 degrees.
  2. gather 2 Zucchini, 2 yellow squash and 4 medium tomatoes
  3. locate a glass pan
  4. evenly slice all three ingredients into same-size pieces. Make sure to slice the same amount of slices for each (20 tomato slices, 20 yellow squash, 20 zucchini).
  5. stack them in any repeating order: green-yellow-red, repeat. Lie them in glass pan.
  6. sprinkle miscellaneous spices over the vegetables. I used onion powder, garlic powder, pepper and himalayan sea salt.
  7. for extra “kick”, I poured in leftover meat braise: soy sauce, rice vinegar, garlic, onion
  8. sprinkle 3 cheese and/or parmesan cheese over the vegetables
  9. place into oven and bake for 25-30 minutes or until squash is soft.

How Does The Challenge Work?

This 5 Day Challenge is designed with the busy adult in mind! Failing to plan our eating choices is the same as planning to fail, so get ready to GET ORGANIZED for the week!

    

You are going to plan out your calories for the week with the help of the menu suggestions. Time to Change Your Daily Habits: There is something for everyone in the challenge. First timers might want to make it a goal to just eat clean all week; others may shoot for losing weight by reducing their current caloric intake. Others may wish to only try and drink 100% of the water schedule. So why does this plan work? By eating frequently and staying hydrated, your body will actually kick into calorie burning mode.

    

It is important to eat the breakfast/lunch/dinner for sure; incorporate the snacks if you are staying on point with the calories from the 3 main meals. It is when you UNDEREAT that your body holds onto calories, thinking it doesn’t know when it will be fed next; and it starts to store fat. Eating Schedule: There are 5 possible meals each day and 5 possible scheduled water intakes. We have assigned 1 point for each successful consumption of water and each meal. Therefore, a perfectly planned Monday would be worth 10 points total. The entire weekly challenge is worth 50 points. There will be small prizes awarded for the folks who can stick to the plan the best!  Challengers are added into a private Facebook group for fun and accountability!

Never Eat This Food!

Hey there! It’s FUN to try new foods! …. .or IS IT??  I made a quick video to talk about a new product that I tried that backfired in a big way!  Last week, I started using the ’21 Day Fix’ clean eating program (CLICK HERE to join my next weight loss challenge group!) to help myself stay accountable to my own weight loss and nutrition goals.  Every day on the program, we have colored containers to measure our food portions.
