Are you looking for a super-satisfying yet healthy alternative to eating processed foods? Me too! I found this simple recipe, and I L-O-V-E it! It’s quick to prep, tasty, low cost, super-filling and makes enough for plenty of servings! So let’s dive in to the nuts and bolts!
- preheat oven to 375 degrees.
- gather 2 Zucchini, 2 yellow squash and 4 medium tomatoes
- locate a glass pan
- evenly slice all three ingredients into same-size pieces. Make sure to slice the same amount of slices for each (20 tomato slices, 20 yellow squash, 20 zucchini).
- stack them in any repeating order: green-yellow-red, repeat. Lie them in glass pan.
- sprinkle miscellaneous spices over the vegetables. I used onion powder, garlic powder, pepper and himalayan sea salt.
- for extra “kick”, I poured in leftover meat braise: soy sauce, rice vinegar, garlic, onion
- sprinkle 3 cheese and/or parmesan cheese over the vegetables
- place into oven and bake for 25-30 minutes or until squash is soft.
